E A T I N G / Lemon Kale Salad



I always look forward to potlucks at work because my boss makes an amazing kale salad that I can never get enough of. I absolutely love salads, but I never make them. Why? Because they always turn out absolutely horrible. This salad, however, is another story. I’m so obsessed that I decided to make it myself.

INGREDIENTS/
1 bunch of kale
1 tablespoon of honey
1/4 cup of olive oil
1 lemon
Salt
Pepper
Crushed red chili flakes
1 package of feta cheese
1 tablespoon of olive oil
1 red onion (chopped)
1 avocado (chopped)
Toasted seed (sunflower seeds were used for this recipe) OPTIONAL




Remove the stalks and chop the leaves




In a large bowl drizzle the honey, olive oil and squeeze the juice of one lemon. Massage the kale until it starts to soften and wilt.




Season the feta with the salt, pepper, and chili flakes to taste. Heat up a small pan and add a drizzle of olive oil. At medium-low temperature, sauté the cheese on each side for 8-10 seconds. Set aside to cool.



Chop the red onion and avocado and add to the bowl of kale.



Cube the feta once it has cooled and add to the bowl. Toss together.



Add more olive oil, lemon juice and seasonings to taste. (I personally like it a little more tart and a little spicy, so this is where I would add the juice of another lemon and crushed red pepper). Top with toasted sunflower seeds (optional).

HOW/

6) Top with toasted sunflower seeds (optional).
